Tomatoes and its varieties are flavorful, fun to eat, aesthetically pleasing and versatile. Since my favorite meal of the day is breakfast I couldn’t not use them like I am presenting them on this recipe. This is a no brainer, however, sometimes we need a little inspiration so our imagination wakes up. Hopefully you can get inspired by this and create more and more with it.
Heirloom tomatoes are mostly at its best on summer and spring. You’ll get tastier, juicier ones. So just keep that in mind.
These type of tomatoes are generally considered to be a variety that has been passed down, through several generations of a family because of it’s valued characteristics. So, lets celebrate and value what we have.
Handful of small heirlom tomatoes/ punado de tomates pequenos
Olive oil/aceite de oliva
Maras salt and pepper/Sal de Maras y pimienta
Bread of your choice/pan de su eleccion
In a medium bowl, crack the eggs, add a pinch of salt and pepper. Mix very well. If you have some natural yogurt, add a splash of it, to get a tastier fluffier texture. Set aside.
Wash the tomatoes and set aside.
Place a pan on the stove, get it on medium high, add a tablespoon of olive oil and let it heat just a little. If you prefer to use coconut oil or avocado oil you are more than welcome, those are great options as well. Place the egg mixture and start to fold in the edges into the center. You want to still get a runny texture. Turn the stove off and plate the eggs.
In the same pan, splash some olive oil and let it heat up and throw the tomatoes and just sauté them so you get some brown marks and thats it! take them out and place them on top of the eggs
Serve very quick and enjoy!
En un tazón mediano, agregar los huevos, sal, pimienta. Si tienes un poco de yogurt natural, agregale, veras que tendras una textura deliciosa.
Lavar los tomates.
Prender la cocina a fuego medio alto. En un sartén, agregar 1 cda de aceite de oliva y dejar que caliente, no mucho. Si deseas puedes usar aceite de coco o de avocado/aguacate/palta, las dos opciones también son muy buenas y aguantan temperaturas mal altas.
En el mismo sartén, o si deseas, otro. Agrega aceite de oliva, déjalo que caliente un poco y agrega los tomates enteros, saltealos hasta que tengas unas marcas marrones. Sácalo enseguida y colocalo encima del huevo
