This is favorite at Las Vecinas and whenever we make them we have a little group of people who are delighted by them. As with everything at the cafe, we focus on our ingredients, always using the same good quality and enjoying making them.
You can use a regular muffin tin but if you place them in small ove safe cups, you will make them stand out even more.
So let’s make them
Ingredients
1 1/2 cups of whole wheat flour ( you can use banana flour and they will end a little gooey and I love that too)
1 1/4 cup of brown sugar
1/4 cup of cacao powder
1/3 cup of olive oil
1tsp of baking soda
1tsp of white vinegar ( you can use apple cider vinegar as well, I’ve tried it and there was not problem of taste)
1 tsp of pure vanilla
1 1/4 cup of filtered water
Method:
Combine in a medium bowl flour with baking soda, brown sugar and set aside. Carve 3 holes in the flour and place the olive oil on one, the vinegar on another one and the vanilla in the third one . Then, please be there with me because it might sound silly but I’ve tried other methods and the final texture won’t be the same. Pour the filtered water on top of the other liquids and then combine with a whisker.
Place on each cup or mold, leaving like about 1 cm or 2 for it to bake well.
Oven medium temperature for around 25-30 min. Insert a stick to check. If it comes out clean, then it’s ready.
Let it cool for 20-30 min and then enjoy!
You can add choco chips, cacao nibs or maybe a dry fruit. The options are endless!!!
